From That Boutique-y Rum Company, comes a pot still rum distilled at Issan distillery, Thailand. The juice used for fermentation was produced using a single harvest of red sugarcane, and distilled in 2015 after passing through their 400 litre pot still. In a process termed ‘affinage’, the spirit rested in stainless steel tanks for 35 months and was bottled at 40% abv. The label by Jim’ll Paint It shows the view from the distillery, overlooking the bushes of red sugarcane.

Expect fruity-floral aromas of green apples, honeydew melon, rose and wet-cut grass. The palate leads to sweet dried grass, briny green olive, white pepper and ripe pear. Spicy pepper notes close this sweet, complex rum.
